One Pan Chicken thighs with veggies
Ingredients
VEGGIES:
- 1 medium head cauliflower cut into pieces
- 1 large red bell pepper
- 1 large yellow bell pepper
- 1 onion
- 16 ounce baby Bella mushrooms
- 2 zucchinis cut into chunks
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon oregano
FOR THE CHICKEN:
- 4 pounds chicken thighs
- 2 tablespoons butter
- 4 cloves garlic minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon oregano
- 2 teaspoons salt
- 1 teaspoon pepper
Instructions
- Preheat the oven to 450°F.
- In a large bowl mix the veggies & the seasonings & olive oil all together. Toss to coat well and spread out into a single layer on the pan.
- In a small bowl, stir together the melted butter, garlic, cumin, paprika, and additional salt and pepper.
- Place the chicken thighs into a large bowl & coat them with the melted butter mixture. Place them on top of the vegetables in the pan.
- Bake for 45 minutes, until the center of the chicken thighs reaches 165°F
- You can also turn on the broil button of your oven for 5 minutes to give the top of the thighs more color.
