One pan chicken thighs with veggies.

Ingredients

VEGGIES: 

  • 1 medium head cauliflower cut into pieces 
  • 1 large red bell pepper 
  • 1 large yellow bell pepper 
  • 1 onion 
  • 16 ounce baby Bella mushrooms 
  •  zucchinis cut into chunks
  • 2 tablespoons olive oil 
  • 1 teaspoon salt 
  • 1 teaspoon oregano 

 

FOR THE CHICKEN:

  • 4 pounds chicken thighs 
  • 2 tablespoons butter 
  • 4 cloves garlic minced
  • 1 teaspoon ground cumin 
  • 1 teaspoon paprika 
  • 1 teaspoon oregano  
  •  teaspoons salt 
  • 1 teaspoon pepper 

 

Instructions

  • Preheat the oven to 450°F.
  • In a large bowl mix the veggies & the seasonings & olive oil all together. Toss to coat well and spread out into a single layer on the pan. 
  • In a small bowl, stir together the melted butter, garlic, cumin, paprika, and additional salt and pepper. 
  • Place the chicken thighs into a large bowl & coat them with the melted butter mixture. Place them on top of the vegetables in the pan. 
  • Bake for 45 minutes, until the center of the chicken thighs reaches 165°F 
  • You can also turn on the broil button of your oven for 5 minutes to give the top of the thighs more color.
