Salmon sushi nori wraps

Salmon Sushi with nori wraps (inspired by shred happens)

Directions:

Take 1lb leftover salmon, or just make some and let it cool.

Add COOLED salmon to a bowl and add 1 to 1.5 tbsp avocado mayo, 1 tsp sesame oil, 1 tsp. Tamari gluten free soy sauce, 1 tbsp rice vinegar, juice of 1/4 small lemon and a pinch of salt. Mix it well, taste, and adjust as needed.

Grab a flat sushi nori sheet. Get some scissors and cut halfway up the middle to make 4 separate guadrants.

Fill up each quadrant with your desired toppings.

I used 2 tbsp of the salmon with about 1/4 of an avocado, 1 tbsp cream cheese (I used kite hill dairy free cream cheese) and cucumber slices. Sprinkle everything but the bagel on top. 

Then start with the bottom left quadrant and fold up, then fold across, then fold down.

Eat as is or dunk, dip, or spoon some sauce or soy sauce on top.
