*You can double or triple this recipe depending on how much chuck roast you have.
Preheat oven to 375°F
INGREDIENTS:
-3 lbs Beef chuck roast
-Sea salt, pepper
-1 large onion cut into rings
-3 large garlic cloves finely chopped
-1 cup beef bone broth
-2 tablespoons of my homemade Mediterranean spice mix. ⬇️
*Home made Mediterranean Spice Mix:
*1 tablespoon chili powder
*1 ½ teaspoons ground cumin
*1 teaspoon sea salt
*1 teaspoon ground black pepper
*½ teaspoon ground paprika
*¼ teaspoon garlic powder
*¼ teaspoon onion powder
*¼ teaspoon crushed red pepper flakes
*¼ teaspoon dried oregano.
Mix all together in a small bowl until combined. Store in an airtight container.
INSTRUCTIONS:
Place the beef in an oven safe pan (preferably with a lid but if not you can cover it with aluminum foil.)
Season both sides of the beef with the salt & pepper.
Next you want to season the beef on both sides with 2 Tablespoons of the homemade spice mix.
Place the onion and garlic on top.
Pour in the beef broth and cover.
Place it in the oven for about 3 & 1/2 hours. Remove the chuck roast from the oven, mix well with the drippings, then put it back in the oven at 425°F for about 45 minutes uncovered. You want it to be melt in your mouth tender.
You can eat as is or add a couple of spoonfuls of this Mediterranean yogurt dip. It is heavenly!

YOGHURT SAUCE:
In a food processor, add 5 heaping tablespoons yogurt, 3 ounces feta cheese, 2 teaspoons olive oil, 2 small garlic cloves, 1 handful mint, 1/2 teaspoon salt, 2 teaspoons olive oil & dash of pepper. Give it a taste and adjust as you’d like.
Taste it & adjust as you like.
