HIGH PROTEIN GRAB & GO EGG BITES
Ingredients:
-6 eggs
-6 egg whites
-1/2 cup shredded cheddar cheese
-1/2 cup cottage cheese
-pinch of salt
-pinch of black pepper
-8 slices of no sugar bacon cooked & chopped up (you can use turkey bacon or ham or whatever other protein you like)
Instructions:
Cook your bacon, either in the oven or in a frying pan and place it on a paper towel to soak up any excess oil. Chop it up and set it aside.
Preheat the oven at 350°F .
Take a square pan. I used my Pyrex pan and fill it halfway with water and place it on the bottom rack in the oven. This is called Bain-Marie method. The purpose of a bain-marie is to create a warm, humid environment to gently cook the eggs.
Place all the ingredients in a blender except the bacon and blend until smooth.
Take a muffin pan, and spray it with avocado oil spray or line it with silicone muffin liners.
Fill the muffin pan 3/4 of the way full. Sprinkle the chopped bacon on top and bake for 25-30 minutes until golden.
These are great in the refrigerator for five days or you can freeze them as well.
