LOW CARB SHRIMP TACOS:
PICO DE GALLO: * 8 oz cherry tomatoes, diced very small * 1/2 small red onion, diced very small * 2 tbs cilantro, chopped * 1 small lime, juiced * 1/4 tsp garlic powder * salt to taste
LIME CREMA: * 1/2 cup Greek yogurt * 1/2 lime, zest + juice * 1/2 tsp monk fruit
AVOCADO MASH: * 2 avocados * 1/2 lime, juiced * 1 tbs Sriracha sauce (or more)
SHRIMP: * 24 shrimp, peeled + deveined * 3/4 tsp garlic powder * 3/4 tsp onion powder * 1 tsp chili powder * 1/2 tsp paprika * 1/4 tsp cumin * 1/2 tsp dried oregano * 8 large romaine leaves * Sprinkle of Everything But The Bagel Seasoning
INSTRUCTIONS: PICO DE GALLO: * Combine all of the ingredients in a large bowl and mix. Taste to adjust garlic powder, salt or lime juice. AVOCADO MASH: * In a medium bowl. add in your avocado, lime juice, Sriracha and salt to taste and give them a rough mash. SHRIMP: * Toss your shrimp with the seasonings to coat. Heat the olive oil in a large skillet and once hot, add in the shrimp. Cook on each side for about 1-2 minutes per side. CREMA: * Whisk all ingredients together. Taste and adjust anything if needed. * Wash and dry your romaine leaves. First layer the avocado mash, then the pico de gallo, next three shrimp and then drizzle with the crema. Lastly, sprinkle with your everything bagel seasoning.
