KOLOKITHOPITA: 


This is a traditional Greek savory pie made with zucchini. 

Kind of like a Greek version of a zuchini quiche. 


Preheat oven to 400°F

2 -3 zucchini washed and grated 

4 eggs 

1 cup yogurt 

140 grams Feta crumbled 

60 grams Gouda grated 

1/4 cup grated Parmesan 

4 Tablespoons almond flour 

1 Tablespoons olive oil 

1/2 teaspoon garlic powder 

1/2 teaspoon onion powder 

Dash salt

Dash pepper 

Optional : 

2 Green onions 

1/2 bunch dill 

Grade your zuchinis and place them in a strainer and add a couple of pinches of salt. 

Let stand for 20 minutes to let the water come out. 

In a large bowl add all ingredients except zuchini & mix well. 

Squeeze out water from the grated  zucchini with a cheese cloth and add to the other ingredients and mix well. Grease a square pan with some olive oil and pour all ingredients in this pan then add a couple of sprinkles of Parmesan cheese on top and bake for about 45- 50 minutes or until golden brown.
