Serves 3-4
-3 lbs lean ground beef
OR
-2 pounds ground chicken

-1 pound lean ground beef
SEASONING:
1/2 tsp. garlic powder
-1/2 tsp. paprika
-a pinch of oregano,
-1/2 tsp. onion powder,
-1/4 teaspoon Himalayan salt
–
BASE:
One whole head of iceberg lettuce
TOPPINGS:
-1/4 onion diced
-1/4 cup diced pickles
-1/4 cup shredded cheddar cheese (omit if dairy free)
-everything but the bagel seasoning
SPECIAL SAUCE : (I use this also as a dipping sauce)
-1/2 cup avocado Mayo
-2 Tbsp. diced onion
-2 Tbs. primal kitchen sugar free ketchup
-1 tsp. yellow mustard
-1 Tbsp. diced pickle
-splash of pickle juice
-1 tsp. Apple cider vinegar or white vinegar
-1/4 tsp. paprika
1/4 tsp. garlic powder
-1/4 tsp. Himalayan salt
-2 drops stevia (optional)
-Sauté the meat on medium high heat & add seasonings
& cook until no longer pink & cooked thoroughly.
-Thinly slice the iceberg lettuce & make the special sauce.
Portion the lettuce base in plates, then add desired chicken & beef mixture, pickles, onions, special sauce & cheese then add a pinch of everything but the bagel seasoning.
