EASY CHICKEN CACCIATORE
-3 lbs chicken pieces (drumsticks, thighs, breasts)
-1/4 cup olive oil
-2 large onions
-4 garlic cloves
-1 x 24 ounce marinara sauce
-3/4 cup chicken bone broth or chicken stock
-3/4 cup water
-1 & 1/2 teaspoon salt
-1 teaspoon oregano
-1/4 teaspoon chili pepper flakes
-1/4 cup dry white wine
INSTRUCTIONS:
On medium heat add the olive oil to a large skillet or Pot and brown the chicken.
Remove chicken from pot and add the wine to the oil used for the chicken to deglaze the pan for 1-2 minutes then add the onions and garlic and sauté until golden.
Stir in the remaining ingredients then return chicken to the pot and simmer covered on medium low heat for about 45 -60 minutes or until chicken is tender and sauce has thickened.
Serve on zucchini noodles or cauliflower rice. Serves 6.
