In a large bowl add: -2 lbs boneless skinless chicken thighs cut up in cubes -1/2 tbsp olive oil -2 & 1/2 tbsp plain greek yogurt -2 tbsp tomato paste -juice of 1 large lemon, -6 minced garlic cloves, -1 tbsp oregano -1 tbsp sweet paprika -1/3 tsp cinnamon -1 tsp cumin -1/2 tsp salt -1/2 tsp pepper
Mix really well & marinate in the fridge for atleast 2 hrs. *It still tastes great without letting it marinate but the longer you let it sit the better it tastes. When you’re ready to cook it, bring chicken to room temp for 30 mins and preheat oven to 450°F Line a sheet pan with parchment paper, and add the chicken. Cut 2 red onions into small wedges or slices and place on the chicken. Place in the oven at 400°F for 25-35 mins. Or until golden brown and cooked to 165°.
CUCUMBER SAUCE: In a food processor add: -3/4 cup plain greek yogurt -1 small English cucumber or 2 Persian cucumbers -3 tbsp finely fresh dill -1 small shallot -juice of half a lemon -1/2 tsp salt & pepper Process until smooth and blended.
You can eat this as is or with your favorite sides and top with a few dollops of the cucumber sauce or my tzatziki sauce.
