Lemon Blueberry Loaf Cake: INGREDIENTS: -6 eggs -1 stick butter (melted) -3/4 cup fresh blueberries (you can also use frozen) -1/2 tsp cinnamon -2 Tbsp sour cream -2/3 cup natural sweetener (allulose or swerve) -1&1/2 tsp vanilla -2 Tbsp heavy whipping cream -10 Tbsp coconut flour -1/2 tsp salt tsp baking powder -1 teaspoon lemon zest
ICING (BEST ICING EVER!!) -2 Tbsp natural powdered sweetener -1 tsp butter melted -1 Tbsp heavy whipping cream -1/2 teaspoon vanilla -1/4 tsp lemon zest
INSTRUCTIONS: Preheat oven to 350F. Line a loaf pan with parchment paper. Beat eggs, sugar, sour cream, heavy cream, vanilla, salt, baking powder & cinnamon. Add in melted butter & beat. Stir in flour & lemon zest Layer half batter in pan, add half of the berries then add the remaining batter, top with remaining blueberries. Gently fold into batter. Bake about 60 minutes. Combine icing ingredients and pour over warm loaf. Voilà! Enjoy!! 🥰
