Low carb Greek Fasolakia (Green beans)

LOW CARB GREEK FASOLAKIA (Green beans) 

Ingredients 

-600 grams Green beans.(fresh or frozen)

-1/3 cup olive oil 

-1 onion chopped

-2 cloves garlic chopped

-1 tbsp tomato paste

-1 cup diced tomatoes 

-1/4 cup parsley chopped 

-1 teaspoon Salt 

-1/2 teaspoon pepper 

-1/2 teaspoon chili peppers 

-1 teaspoon oregano 

-3/4 teaspoon Montréal steak spice 

-1/2 cup fresh dill chopped 

-200 grams of frozen artichoke hearts 

-1 turnip peeled & cut into small pieces 

-4 cups water 

Instructions

  1.   On medium heat, add the olive oil, onion and garlic for 2-3 minutes, then add the tomato paste and tomatoes.
  2.   Add the artichokes & turnip and stir to combine.
  3. Add the green beans, 1+1/2 cups of water and the salt and pepper.
  4. Turn the heat down and cover with lid and cook for30-40 minutes until the beans are tender but not mushy. 
  5. *Add a little more water if the sauce dries out.
  6. -Once everything is cooked, remove the lid & cook uncovered to lessen the liquid.
  7. -When the beans are tender add the parsley.
