LOW CARB MEDITERRANEAN BEFF KEBABS
- INGREDIENTS:
- 2 lbs lean ground beef
- 1 medium onion finely chopped
- 1/3 cup parsley chopped
- 4 garlic cloves minced
- 2 tsp sea salt
- 1 tsp cumin
- 1 tsp oregano
- 1/3 tsp cinnamon
- 1/2 teaspoon red pepper flakes
- 2 teaspoons paprika
- 8 wooden skewers
- INSTRUCTIONS:
Preheat oven to 350°F
- Place the ground beef and the rest of the ingredients in a large bowl.
- Mix the ingredients together with your hands to combine.
- Cover with plastic wrap and place in the refrigerator for 30 minutes to give the seasonings time to marinate.
- Form the seasoned beef into a log shape and mold it on to the wooden skewers (or metal skewers) squeezing the mixture.
- Place the Kebobs on a baking tray lined with parchment paper and cook for 15-18 minutes. You can also grill these on the BBQ.
TZATZIKI SAUCE
- 24 ounces Greek yogurt
- 1 English cucumber peeled. Scoop out the seeds, grate it with a cheese grater then squeeze out the water preferably with a cheese cloth. (The less water the better)
- 3 cloves garlic minced
- 2 tablespoon olive oil
- 3 tablespoons Red wine vinegar
- 1/2 teaspoon salt or to taste
- 1/4 teaspoon white pepper
- 1 teaspoon finely chopped dill
- Place all the ingredients into a medium sized bowl & Mix them all together.
- Place in the refrigerator for atleast 30 minutes so the flavors can mesh together before serving.
Dip the kebabs in the tzatziki sauce and Voilà!! So Delicious!! Enjoy!!
