NORI SHEET SALMON CUPS
- 1 Ib salmon, skin removed and cut into small cubes
- 2 tbs sesame oil (or olive oil)
- 1 tbs tamari sauce
- 1 tbs honey (I use wholesome yum natural sugar free honey Alternative With Monk Fruit & Allulose)
- 2 green onions diced
- 1/2 tsp garlic powder
- 1/2 tsp. onion powder
- 1/2 tsp. chili powder
- 1/2 tsp. paprika
- 1/2 tsp. oregano
- 1/4 tsp salt or more to taste
Spicy mayo:
- 1/4 cup avocado mayo
- 2 tsp Hot sauce
- 1 tsp honey (wholesome yum)
- TOPPINGS:
- 1/2 avocado, diced small
- INSTRUCTIONS:
- Preheat your oven to 400ºF.
- Cut your nori sheets into four equal squares with a scissor.
- Toss your cubed salmon in a bowl with all of the rest of the salmon ingredients and coat.
- You can marinate for up to 4 hours if you want.
- Add about 4-5 salmon cubes to each nori square.
- Transfer the square to your muffin slot, pushing down gently with the edges coming up along the sides of the slot.
- Transfer the pan to your oven and bake for 15-17 minutes. Broil, if needed, at the end, to get a little color on the salmon about 1-2 minutes.
- Remove allow to cool slightly and top with your avocado and drizzle of spicy mayo.
