Baked chicken thighs with sautéed mushrooms

IMG_5608 BAKED CHICKEN THIGHS WITH SAUTÉED MUSHROOMS 
 
Preheat oven to 425°F 
 
INGREDIENTS:
* 3lbs boneless/ skinless chicken thighs 
* 2 teaspoon paprika
* 2 teaspoon garlic powder
* 2 teaspoon onion powder
* 1 1/2 tsp salt or to taste
* 1 teaspoon Black Pepper
* 1 teaspoon oregano 
* 1 teaspoon ground all spice 
* 1 teaspoon cumin 
DIRECTIONS:
*In a small bowl, mix the paprika, oregano, garlic powder, onion powder, salt, and pepper. Set aside. 
* Lay the thighs out evenly on a pan or baking sheet, sprinkle half of the seasoning mix over the thighs & gently rub into the thighs & then flip over & sprinkle on the remaining seasoning & do the same.
* Roast in  oven for 20 to 25 minutes OR until the thickest part of the thighs has reached an internal temperature of 165°.F
*For the mushrooms, I just sautéed them in a tablespoon of olive oil with some Montreal steak spice.
* Remove the baking sheet from the oven and allow the chicken to rest for 8 to 10 minutes before serving.
