Sheet Pan Tacos 🌮
Crispy, cheesy tacos baked in the oven and topped with a creamy avocado sauce.
So easy and perfect for a quick dinner.
Makes about 10 tacos.
Taco Filling:
• 1 lb ground beef
• ½ purple onion, diced
• 2 tbsp cilantro, chopped
• 1 tsp paprika
• 1 tsp chili powder
• 1 tsp cumin
• ½ tsp coriander
• ½ tsp dried thyme
• ½ tsp onion powder
• ½ tsp garlic powder
• ¾ tsp salt
• 8 oz cheddar cheese, shredded
• 10 small tortillas ( I use egglife wraps)
• Avocado oil spray
• Salt & pepper
Avocado Sauce
• 2 ripe avocados
• ½ cup Greek yogurt
• Juice of 1 lime
• 2 tbsp cilantro
• 1/4 tsp Salt & pepper (or more to taste)
Directions
1️⃣ Preheat oven to 400°F convection or 425°F bake.
2️⃣ In a bowl mix ground beef, onion, cilantro, and all spices until well combined.
3️⃣ Place a small ball of meat in the center of each tortilla and spread evenly to the edges. Add shredded cheddar in the middle and fold the tortilla to form a taco.
4️⃣ Place tacos on a wire rack over a baking sheet (so they get crispy). Spray the back of the tortillas & on the rack lightly with avocado oil.
5️⃣ Bake 20–30 minutes until golden and crispy. Let cool for 5 minutes.
6️⃣ Blend all avocado sauce ingredients in a food processor until smooth.
Serve the tacos with the avocado sauce and a squeeze of lime.
