Yiayia’s Briami (Greek roasted vegetables)
1 Eggplant cut into chunks
1 Zuchini cut into chunks
2 red peppers sliced (not too thin)
1/2 bunch Parsley (stems removed)
2 stalks celery
16 ounces baby Bella Mushrooms
2 medium onions
4 cloves garlic
1 +1/2 teaspoons steak spice
1 teaspoon cumin
Pinch of Nutmeg
Pinch of Cinnamon
1/2 teaspoon ground Pepper
1/2 teaspoon chili pepper flakes
2 tablespoons olive oil
1/4 cup tomato sauce Or diced tomatoes
-6 pieces Artichoke meat
INSTRUCTIONS:
Preheat oven to 450°F
Mix all spices together in a small bowl set aside.
Prepare all your veggies in a large pan, add olive oil & coat well. Add spices & coat well
Bake in oven for about 30-45 minutes or until veggies are golden brown.
*Turn your oven on broil for 5 minutes if you want them crispy.
