Ground turkey and zuchini soup
Ingredients:
- 1 & 1/2 lbs ground turkey
- 1 tsp grass fed butter
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1/4 tsp chili pepper flakes
- 1 tsp oregano
- 6 medium baby Bella mushrooms diced.
- 1/4 cup sun-dried tomatoes finely chopped
- 1 tsp salt
- 1 tsp pepper
- Dash of cayenne pepper
- 6 cups chicken bone broth
- 2 medium zuchini finely chopped
- 3/4 cup cashew milk (for a creamier soup, you can use heavy cream instead)
- Parmesan Cheese whisps crumbled (optional)
Directions:
In a large pot on medium heat, add the butter then add your ground turkey and cook until brown.
Add your diced onion and garlic and sauté for a couple of minutes. Add the sun dried tomatoes, zucchini and mushrooms and sauté well.
Add salt, pepper, oregano, cayenne, chili pepper flakes and chicken broth.
Bring your soup to a low simmer for a few minutes then add the cashew milk and let it simmer for another 5 minutes. Add the crumbled Parmesan whisps in the soup.
